MJ’S HEALTHIER ZUCCHINI BREAD

 

mj’s healthier zucchini bread

Equipment

  • oven
  • 8x4-inch loaf pans
  • 2 medium size bowls
  • baking racks

Ingredients
  

  • non-stick cooking spray
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour optional - 1 tbsp malted barley flour*
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp nutmeg
  • 3 tsp ground cinnamon
  • 3 eggs
  • 1 cup avocado oil or other vegetable oil
  • 3 tsp vanilla extract
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 1/2 cups zucchini grated
  • 1 cup chopped walnuts

Instructions
 

  • preheat oven to 325 °
  • spray - (2) 8x4-inch loaf pans with non-stick cooking spray
  • mix - flour + baking powder + baking soda + salt + nutmeg + cinnamon in a medium size bowluntil thoroughly combined
  • mix - eggs + oil + vanilla + sugars + zucchini + walnuts in a medium size bowl until thoroughlycombined
  • add - flour mixture to egg mixture and mix gently until just combined
  • pour - batter dividing evenly into loaf pans
  • bake - 40-45 minutes, until toothpick or tester comes out “almost” clean
  • cool - in pans on baking rack for about 10 minutes
  • remove - bread from pan
  • ENJOY!
