Equipment
- oven
- 8x4-inch loaf pans
- 2 medium size bowls
- baking racks
Ingredients
- non-stick cooking spray
- 2 cups all-purpose flour
- 1 cup whole wheat flour optional - 1 tbsp malted barley flour*
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp nutmeg
- 3 tsp ground cinnamon
- 3 eggs
- 1 cup avocado oil or other vegetable oil
- 3 tsp vanilla extract
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 1/2 cups zucchini grated
- 1 cup chopped walnuts
Instructions
- preheat oven to 325 °
- spray - (2) 8x4-inch loaf pans with non-stick cooking spray
- mix - flour + baking powder + baking soda + salt + nutmeg + cinnamon in a medium size bowluntil thoroughly combined
- mix - eggs + oil + vanilla + sugars + zucchini + walnuts in a medium size bowl until thoroughlycombined
- add - flour mixture to egg mixture and mix gently until just combined
- pour - batter dividing evenly into loaf pans
- bake - 40-45 minutes, until toothpick or tester comes out “almost” clean
- cool - in pans on baking rack for about 10 minutes
- remove - bread from pan
