easy sausage egg bake
Equipment
- 9x13 pan
- skillet
Ingredients
- 1 9x13 pan non-stick cooking spray
- 1 tbsp olive oil
- 1 medium yellow onion diced
- 2 red bell peppers diced
- 2 cups mushrooms roughly chopped
- 4 cups fresh spinach roughly chopped
- 4 large chicken & apple sausages diced
- 12 eggs or 1 carton of liquid eggs or egg whites
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- oven to 350°
- 9x13 pan with nonstick cooking spray
- olive oil in a skillet over medium-high heat and sauté onion and peppers until soft
- seasonings & mushrooms, sauté until slightly browned
- chopped chicken apple
- spinach until wilted
- veggie & sausage mixture evenly in bottom of baking pan
- in a medium bowl, eggs and a pinch of salt and pepper
- egg mixture over veggie and sausage mixture
- baking dish in the oven and cook for approximately 35 minutes until edges of the egg begin to brown and the egg bake is fairly firm throughout
Notes
garnish - with fresh salsa or freshly grated parmesan cheese & finely minced chives
serve - with roasted potatoes topped with sour cream and fresh fruit
